    Berry Fruit Salad {dairy-free}

    Dairy-free and refined sugar-free fruit salad? Yes, please! This berry fruit salad is my attempt at creating a healthier version of the fruit salad of my childhood.

    I grew up in the Philippines where our idea of fruit salad was mixing canned fruit cocktail, canned full cream and canned condensed milk. Wait, what? Canned food was very common then and we did not think any less of it.

    As my diet changed and I started to avoid conventional dairy, canned and processed food, I wanted to re-create this fruit salad especially as berry season rolled around.

    Dairy-free Cream

    What will I substitute for the dairy cream? I did not want to buy boxed non-dairy milk. Then, I had an aha! moment and thought homemade cashew cream! Yes!

    So I soaked some raw cashews for a couple of hours. I put the soaked cashews in the Vitamix, added some water and raw honey, and blended it all together for some creamy goodness.

    For a nut-free option: substitute sunflower seeds for the cashews. Soak the sunflower seeds overnight.

    Soaking nuts and seeds lessens the anti-nutrients such as phytic acid and makes them more digestible. Raw nuts (not toasted) have all the good fats.

    Raw honey is unpasteurized honey and has plenty of anti-bacterial benefits.

    Fruit Medley

    I just bought some blueberries, strawberries and grapes. So I cut up the strawberries into quarters and diced an apple. I sliced a banana as well.

    Use local and seasonal fruits as much possible.

    Berries, especially blueberries, are high in antioxidants. Strawberries are a great source of vitamin C. Try to buy organic if you can, especially these types of fruits where we eat the skin and all.

    Mix the fruits and cashew cream together, and voila, dairy-free berry fruit salad. Yum!

    This recipe is so versatile, I'm excited to try other fruits as well. No canned fruit cocktail anymore! 😉

    Ingredients

    Cashew Cream

    • ¼ cup cashews soaked for 2-6 hours
    • ½ cup water
    • 1 tablespoon raw honey or maple syrup

    Fruit Medley

    • 1 cup blueberries
    • 1 cup grapes
    • 1 cup strawberries diced
    • 1 apple cored and diced
    • 1 banana sliced
    • sprig of mint (optional)

    Instructions

    • Make the cashew cream: In a high-speed blender, add soaked cashews, water and honey. Blend on high until smooth.
    • In a large bowl, add all the fruits and the cashew cream. Mix everything together.
    • Place in the refrigerator to chill. Serve cold.

    Notes

    For a nut-free option, use sunflower seeds instead of cashews for the cream.
