Ingredients
4cupsbone broth or veggie broth
1sweet potatospiralized
6Brussels sproutsquartered
2clovesgarlicminced
½teaspoonturmeric
½teaspoonsea salt+ more to taste
1handful mung bean sprouts
1green onionchopped
½ cupcooked chickenshredded (optional)
Instructions
Spiralize the sweet potato. Or just cut into matchsticks if you don't have a spiralizer.
In a medium pot, add the broth, cover and bring to a boil.
Add sweet potato noodles, Brussels sprouts, garlic, turmeric, salt. to the pot. Add chicken if desired. Bring back to a boil, then lower heat and simmer for 5 minutes.
Add mung bean sprouts and green onions. Simmer for a couple more minutes until sweet potato noodles are fork-tender.
