Ingredients
2tablespoonvirgin coconut oil
2clovesgarlicminced
1oniondiced
1zucchinichopped
1cauliflowerroughly chopped (3-4 cups)
1broccoliroughly chopped (3-4 cups)
6cupsbone broth or water
1 ½teaspoonsea salt(plus more to taste)
5tablespoonnutritional yeast
Instructions
In a large pot, set to medium heat, add coconut oil.
When oil is hot, add garlic and onions. Sauté until the onions are softened, about 5 minutes.
Add zucchini, cauliflower, broccoli, bone broth or water, and salt. Cover pot, bring to a boil, then lower heat and simmer for 10 minutes.
Once vegetables are tender, add nutritional yeast. Use an immersion blender to purée the soup in the pot. Or carefully transfer to a vented blender, and process on high to purée the soup. You may have to do this in batches depending on the size of your blender container.
