This Creamy Broccoli Soup, while simple to make, is nutritious and chock full of cruciferous vegetables. What a great soup to warm you up on a cold winter day. I particularly love that it is creamy without the use of dairy!
Ingredients
Broccoli is one of those cruciferous vegetables that one must eat regularly because of its health benefits. It is an excellent source of vitamin K, vitamin C, chromium and folate. It is high in anti-inflammatory and antioxidant phytonutrients.1
Cauliflower is another member of the cruciferous vegetable family like broccoli. It is rich in antioxidants and has glucosinolates that offer a variety of health benefits. It is also an excellent source of vitamin C, vitamin K, folate, pantothenic acid and vitamin B6.2 It makes this soup creamy without any dairy.
Zucchini is a summer squash that is an excellent source of copper and manganese, and has antioxidant carotenoids.3 It provides more creaminess to this soup.
Garlic and onions are members of the allium family of vegetables. Garlic is an excellent source of manganese and vitamin B6, but it is garlic's sulfur-containing compounds that give the most health benefits.4 Onions are rich in polyphenol flavonoids like quercetin and are a very good source of biotin.5
Nutritional yeast provides some cheesy flavour to this soup and is a source of vitamin B12.6

Making the Soup
In a large pot, add the virgin coconut oil and set to medium heat.
When oil is hot, add the garlic and onions, and sauté until the onions are softened, about 5 minutes.
Add the chopped zucchini, broccoli, cauliflower, bone broth or water, and salt. Cover, bring to a boil, lower heat and simmer for 10 minutes or so.
When the vegetables are fork tender, turn off the heat and add the nutritional yeast.
You may use an immersion blender to purée the soup right in the pot. Or you may use a vented blender if you have one. I have a Vitamix like this one.
Carefully transfer the soup into your vented blender and process on high to purée the soup. You may need to do this in batches depending on the size of your blender container.

Creamy Broccoli Soup
Ingredients
- 2 tablespoon virgin coconut oil
- 2 cloves garlic minced
- 1 onion diced
- 1 zucchini chopped
- 1 cauliflower roughly chopped (3-4 cups)
- 1 broccoli roughly chopped (3-4 cups)
- 6 cups bone broth or water
- 1 ½ teaspoon sea salt (plus more to taste)
- 5 tablespoon nutritional yeast
Instructions
- In a large pot, set to medium heat, add coconut oil.
- When oil is hot, add garlic and onions. Sauté until the onions are softened, about 5 minutes.
- Add zucchini, cauliflower, broccoli, bone broth or water, and salt. Cover pot, bring to a boil, then lower heat and simmer for 10 minutes.
- Once vegetables are tender, add nutritional yeast. Use an immersion blender to purée the soup in the pot. Or carefully transfer to a vented blender, and process on high to purée the soup. You may have to do this in batches depending on the size of your blender container.
- Add more salt if required. Serve warm and enjoy!
