So, after learning that bone broth was a great healing food for gut health-related issues like eczema, plus the weather getting colder at that time, I wanted to create a gut-healing, tummy-warming soup.
I took inspiration from the list of eczema-healing foods and chose those that could go into a soup such as mung bean sprouts, green onions, and sweet potato. I also wanted to add turmeric for its anti-inflammatory benefits.
Health Benefits of Key Ingredients
Bone Broth
- Eczema is strongly related to gut health issues, and a good bone broth helps to heal the gut and strengthen the digestive system.1
- Good bone broth has collagen/gelatin, glycine, keratin, and other amino acids and minerals that benefit skin, teeth, bones, joints, hair and nails.2
Brussels Sprouts
- Alkalizing and very nutritious, Brussels sprouts provide vitamin C, potassium, folate, and choline.3
- They also contain antioxidant alpha-lipoic acid that regenerates vitamin C and E and lowers blood sugar levels.4
Sweet Potato
- Anti-inflammatory, rich in alkalizing potassium, has antioxidant beta-carotene and histamine-lowering vitamin C.5
Turmeric
- It provides anti-inflammatory benefits, decreased cancer risk, and supports detoxification and helps alleviate some digestive disorders.6
Mung Bean Sprouts
- These sprouts are strongly alkalizing and contain magnesium, vitamin K, folate, potassium, and vitamin C and they are also salicylate-free.7
Green Onions
- Contain histamine-lowering, anti-inflammatory quercetin.8
- Has antioxidant flavonoids that become allicin when cut or crushed.9
- Rich source of vitamin K, important for healthy skin.10
Let's Make Some Soup
Spiralize the sweet potato into noodles. If you don't have a spiralizer, just cut it up into matchsticks.
This recipe calls for a bone or veggie broth. See my Instant Pot Bone Broth recipe.
In a large pot, set to medium heat, add the broth to heat it up.
Add the sweet potato noodles, Brussels sprouts, garlic, turmeric, and salt. Stir to mix. Bring to a boil and let simmer for about 5 minutes.
Add the mung bean sprouts and green onions, and let simmer for a couple more minutes until the noodles are fork-tender.
Serve warm and enjoy!
I probably would never have thought of mixing all these veggies in a soup had I not learned about the healing benefits each one had for eczema. It actually turned out to be a hearty and delicious soup.

Brussels Sprouts Sweet Potato Noodle Soup
Ingredients
- 4 cups bone broth or veggie broth
- 1 sweet potato spiralized
- 6 Brussels sprouts quartered
- 2 cloves garlic minced
- ยฝ teaspoon turmeric
- ยฝ teaspoon sea salt + more to taste
- 1 handful mung bean sprouts
- 1 green onion chopped
- ยฝ cup cooked chicken shredded (optional)
Instructions
- Spiralize the sweet potato. Or just cut into matchsticks if you don't have a spiralizer.
- In a medium pot, add the broth, cover and bring to a boil.
- Add sweet potato noodles, Brussels sprouts, garlic, turmeric, salt. to the pot. Add chicken if desired. Bring back to a boil, then lower heat and simmer for 5 minutes.
- Add mung bean sprouts and green onions. Simmer for a couple more minutes until sweet potato noodles are fork-tender.
- Add more salt to taste if desired.
- Serve warm and enjoy!

I made this today. Since my mom found out she had cancer, we are eating no sugar, no Gluten, and no dairy. This soup is really good! I added a bit more salt and turmeric. Added some black pepper and a little coconut milk. It was really delicious! Thank you for sharing!
